Amah’s Vegetarian Sausage Rolls

These are delicious. This quantity makes 2 dozen mini rolls. Equally good warm or cold. Warning, you may not return to the meaty ones again.
Ingredients
- 3 eggs
- 1 onion
- 3 tablespoons milk
- ½ cup walnuts
- 1 teaspoon mixed herbs
- 2 tablespoons soy sauce
- 1 cup grated cheese
- ½ cup quick oats
- 1 small cup breadcrumbs
- 2 sheets readymade puff pastry
- 1 beaten egg for egg wash
- Sesame seeds (optional)
Method
- Blend eggs, onion, milk, walnuts, herbs and soy sauce until smooth
- Mix with cheese, oats and breadcrumbs
- Divide into 4 portions
- Cut the 2 sheets of pastry lengthways (4 portions)
- Spoon on the filling and squash into a rough sausage shape
- Brush the edge with egg wash and roll up
- Slice into bite size rolls – about 6 per pastry length
- Place on an oven tray and brush tops with egg wash
- Sprinkle with sesame seeds (optional)
- Place in a pre-heated oven to cook at 200-220C for 12-15 minutes until golden
Tips
- Seal the seam of the pastry using a fork so the pastry doesn’t unravel in the oven.
- If you have time, allow the sausage rolls to rest in the fridge for about 20 minutes before cooking
- The rolls freeze well but best to freeze uncooked
