Margie’s Macadamia Shortbread
300 gms unsalted butter softened
150 gms caster sugar
300 gms (2 cups) plain flour sifted
150 gms (1 cup) cornflour sifted
100 gms chopped macadamia nuts (salted if you like)
Preheat oven to 150 degrees C
Beat butter and caster sugar until light and creamy.
Fold in flour and macadamias
Roll into small balls and place on lined baking tray allowing space to spread
Flatten with fork – Approx. 1cm thick
Bake for 15-20 minutes until lightly coloured but not brown (depends on oven)
Allow to cool and harden on a wire rack
